Herb Chicken and Mushroom

Ingredients:
- 1 pound of chicken breast, cut into bite-sized pieces
- 1 medium onion, diced
- 3 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup chicken broth
- Fresh parsley for garnish
Instructions:
1. Start by heating the olive oil in a large skillet over medium heat. Once hot, add the diced onions and sauté them until they become translucent, about 3-4 minutes.
2. Add the minced garlic to the onions and cook for an additional 1-2 minutes until the garlic is fragrant.
3. Next, toss in the sliced mushrooms and cook until they are golden brown and their moisture has evaporated, approximately 5-7 minutes.
4. Stir in the chicken pieces and season with thyme, oregano, salt, and pepper. Cook the chicken until it's browned on all sides, about 6-8 minutes.
5. Pour the chicken broth into the skillet and bring the mixture to a gentle simmer. Let it cook for an additional 10-12 minutes until the chicken is thoroughly cooked and the flavors meld beautifully.
6. Once done, taste and adjust seasoning as needed. Remove from heat.
7. Sprinkle freshly chopped parsley on top for added freshness before serving.
