Beef and Cheese Chimichangas

Ingredients:
6 large flour tortillas
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp cumin
1 tsp chili powder
½ tsp salt
½ tsp black pepper
1 cup shredded cheddar cheese
½ cup Monterey Jack cheese
Vegetable oil for frying
Salsa, sour cream, and guacamole for serving
Instructions:
1️⃣ Cook the beef: In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned. Drain any excess fat. Add cumin, chili powder, salt, and pepper, cooking for an additional 2 minutes.
2️⃣ Add cheese: Remove from heat and let the mixture cool slightly. Mix in shredded cheddar and Monterey Jack cheeses.
3️⃣ Assemble the chimichangas: Place about 1/6 of the beef and cheese mixture in the center of each tortilla. Fold the sides in, then roll it up tightly like a burrito.
4️⃣ Fry: Heat a generous amount of vegetable oil in a deep skillet. Fry each chimichanga until golden brown on all sides, about 2-3 minutes per side. Drain on paper towels.
5️⃣ Serve: Serve hot with salsa, sour cream, and guacamole for dipping.
