Creamy Potato Soup

 This Creamy Potato Soup is the perfect comfort food for chilly days!

Ingredients:
6 slices bacon, diced
1 medium onion, chopped
3 cloves garlic, minced
3 pounds russet potatoes, peeled and cubed
4 cups chicken broth
2 cups milk
1 cup heavy cream
2 tablespoons butter
Salt and pepper to taste
1/2 cup shredded cheddar cheese
1/4 cup chopped green onions
Directions:
In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
Add the chopped onion to the pot and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
Add the cubed potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a blender and blend until smooth, then return it to the pot.
Stir in the milk, heavy cream, and butter. Season with salt and pepper to taste. Heat the soup until warmed through, but do not bring it to a boil.
Serve the soup hot, topped with shredded cheddar cheese, crispy bacon, and chopped green onions.
