Ginger beer recipe: natural, delicious, and healing

Ingredients:
1 cup fresh ginger, grated
1 cup granulated sugar
1/4 cup lemon juice
1/4 teaspoon active dry yeast
8 cups water
Optional: additional sugar for sweetness, lemon or lime slices for garnish
Instructions:
1. In a large pot, combine the grated ginger, sugar, and lemon juice with 4 cups of water. Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes.
2. Remove the pot from the heat and let the ginger mixture cool to room temperature.
3. Once cooled, strain the mixture through a fine mesh sieve or cheesecloth into a clean container to remove the ginger pulp. Discard the pulp.
4. In a small bowl, dissolve the yeast in 1/4 cup of lukewarm water. Let it sit for about 5 minutes until frothy.
5. Pour the ginger mixture into a large pitcher or jug, then add the dissolved yeast and remaining 4 cups of water. Stir well to combine.
6. Cover the pitcher or jug with a clean cloth or plastic wrap and let it sit at room temperature for 24-48 hours to ferment.
