Ingredients:
2 cups mashed potatoes (preferably leftover)
1 cup shredded cheddar cheese
1/2 cup all-purpose flour
1 large egg, beaten
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1 cup breadcrumbs (for coating)
2 tablespoons fresh parsley, chopped (for garnish)
Olive oil (for frying)
Directions:
In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until the ingredients are well incorporated.
Shape the potato mixture into small bite-sized balls, about 1 to 1.5 inches in diameter.
Roll each potato ball in flour, then dip it into the beaten egg, and coat it with breadcrumbs.
Heat a few tablespoons of olive oil in a large skillet over medium heat. Fry the potato bites in batches, cooking for 2-3 minutes per side or until golden brown and crispy.
Remove the potato cheese bites from the skillet and place them on a paper towel-lined plate to drain excess oil.
Garnish with fresh chopped parsley and serve immediately.
